Owner Chef Junichi Matsuura
Born 1971, from Yokohama
In 1995, he moved to New York to work as a sushi chef.
For 23 years, he honed his skills at the sushi counter of high-end Japanese restaurants, serving celebrities from around the world.
At the time, he studied high-end Japanese cuisine at "Morimoto," which was popular due to the influence of the TV program "Iron Chef," and at "Kyoya," which had received a Michelin star for 10 consecutive years.
His Japanese cuisine mentor was Mr. Sono of "Kappo Sono" in New York.
And his sushi mentor was Mr. Toshio Saito of the renowned "Sushi Sho Saito" in Akasaka, Tokyo.
In 2018, he returned to Japan and moved to Kanazawa, a city blessed with abundant water and ingredients.
After serving as the head chef of Japanese cuisine at the Kizabashi restaurant within Hotel Sanraku Kanazawa, he opened Sushi Matsuura in 2025.
